Lebanese immigrants adapt their spit-grilled shawarma to local ingredients. Al pastor is born — Middle Eastern technique, Mexican soul.

Today, Hyderabad

Zoco finishes the story on purpose: one halal kitchen, two cuisines that were quietly the same idea all along.
